Autumn Squash Soup

It’s finally here! It’s time for food to be WARM. Heat and spice!

When we got a squash and apples in our box last week, I knew it was time to create a new dish!

Apple and Squash Soup

I needed something quick and easy with LOADS of spice. And so was born my Autumn Squash Soup.

This recipe makes about two bowls. Just enough for a light dinner, served with fresh bread.

1/2 butternut squash
1/2 onion
3-4 cloves garlic
1 apple (I used Granny Smith)
2-3 poblano or other mild peppers
2 cups of stock

1/2 tsp. cayenne pepper (if you love heat!)
1-2 tsps. cumin
1-2 tsps. smoked paprika
1 tsp. garam masala (if you don’t have any, try a dash of cinnamon)

Roughly dice the veggies and saute in a tablespoon of olive oil. Once soft, stir in a couple cups of stock, just to cover the veggies. Cook for a minute or two, then either pour into a blender or blend with an immersion blender until smooth. Serve warm with a dollop of sour cream!
