Over the last couple years, I have fallen for figs. The first time we got them in our CSA basket I was a bit overwhelmed… and now I eagerly await them. They mean that summer evenings might have just a bit of cold nipping as the sun sets. They mean that cinnamon, and nutmeg, and cardamom will be in high demand in the kitchen. They mean that the seasons are transitioning.
- 1 qt figs
- 1/4 cup sugar
- 1/2 tsp apple pie spices
- Rinse and half the figs, removing their stems. Drop into a large sauce pan, with the sugar and spices. Cook over medium-hot heat, smooshing with the back of a ladle. Use an immersion blender to break down the figs. Cook for 30 minutes, stirring frequently. Spoon into a large (32oz) wide mouth canning jar or several smaller ones.
- Serve with french bread and brie... or just eat it with a spoon!
- Store in the refrigerator!
