Persimmon Raisin Cookies

I’ve been on something of a soft cookie kick lately. These were simple to whip up and an indulgent use of all the persimmons that are two by two ripening on my counter. Okay… when I say indulgent, I mean, I’ve been eating on them all day. 
Persimmon Raisin Cookies
1/2 cup sugar
1/2 cup coconut oil
1 egg
1 cup persimmon pulp
2 cups flour
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1 tsp baking soda
1 cup chopped raisins

Preheat the oven to 350F Cream the coconut oil and sugar. Mix in the egg and pulp. Mix in the dry ingredients, adding the raisins last. Drop cookies by the spoonful onto a baking sheet. Bake for 14 minutes.
